Veggie Delights -- Delicious Big Bowl Quinoa

What Veggie Delights is all about: I'm convinced that I can share with you some really amazing meatless dishes that you will love, even if you're not a Vegetarian!

Okay, let's just go ahead and get it out of the way - my picture taking skills STINK! The picture above does not do this recipe justice. I promise you it is probably one of the most delicious recipes I have tried in a very long time. My husband and I both loved it!

The mixture of all the ingredients is just perfect. I love nuts, potatoes, and grains mixed together. It's so yummy. If you've never tried quinoa, you're in for a treat. It's kind of like rice or couscous or any other grain. The texture is what sets it apart, though (it's a nutty grain). You'll know it's done cooking when the quinoa opens up and you see little curly spirals. The trick with quinoa - DO NOT OVERCOOK! It's supposed to be just a tad crunchy-like. You don't want to overcook, or it will become a sloppy/soggy mess that has no texture at all. Quinoa is so healthy for you, and a great way for Vegetarians to get protein!

This recipe came from one of my favorite Vegetarian cooking blogs called 101 Cookbooks. I followed the recipe almost exactly as it is written.

Ingredients:

2 cups quinoa, rinsed well
4 cups water
1 tsp salt
extra virgin olive oil
4 medium/large potatoes
1 large onion
1 clove garlic
1 cup nuts (I used walnuts)
1-2 cups asparagus

Directions:

1. Combine quinoa, water, and salt in a pot. Cook according to package instructions. Drain, set aside.

2. While the quinoa is cooking, dice the potatoes and chop the onions.

3. Heat some olive oil in a pan on the stove. Add potatoes and cook until tender and a little crispy (I like mine extra crispy, though).

4. Meanwhile, cook asparagus however you'd like to. (I simply boiled/steamed mine. It took about 5 minutes.) Also, place nuts on a cookie sheet in a single layer and toast in the oven until slightly browned.

5. When potatoes are done cooking, salt to taste and set aside. In the same pan, heat some more oil. Cook onions for a bit, then add minced garlic. Cook until desired softness.

6. Combine everything together in a large bowl: quinoa, potatoes, toasted nuts, cooked asparagus, and onions/garlic. Salt and pepper to taste.

7. Enjoy!

They almost claim to be "magic" like you see on television, the ones that you just spray and don't even have to wipe? Ha! We'll see. These were originally $7.99 each! I can not imagine paying that much for a cleaner. It's definitely worth a try for free, though!

Pantene Nature Fusion Shampoo - I received this full-sized freebie today in my mailbox from Vocal Point! Woo Hoo! Plus, it contained (3) $2/1 coupons with it.

Olay Effects body wash and Burt's Bees toothpaste - Two freebie samples that I received in my mailbox today! Think trial and travel sized freebie items aren't worth grabbing? Think again!

Saveur cooking magazine - I requested a free subscription to this magazine a while back. Just got my first issue in my mailbox today! I'm very excited. I love cooking magazines.

Trying new products for free is definitely a perk to being frugal...

FREE My Little Pony At Toys R Us - TODAY ONLY!

Today (3/31) only, Toys R Us is having a buy one get one free sale on My Little Pony! Use the buy one get one free coupon from 3-21-10 SS or printable coupon here. You'll get two for FREE. The manufacturer pays for one, and Toys R Us pays for the other.

I will warn you, though. Toys R Us is apparently not the most coupon-friendly place in the world, so they might not let you do this. Walking out of stores with completely free items just seems to raise red flags, even when it's perfectly legal.

So if you're in the area and want to give it a shot, let me know how it goes! I don't know if I'd make a special trip just to try it, though.

Tuesday Tidbits & Tips: Purging Old Coupon Inserts

Yesterday I decided to purge my old coupons and clean up my coupon organizing system. It was overflowing and coupons were all over the place! I feel so much better now.

How do you go about purging old coupons, you might ask? I have a really easy system that prevents me from throwing out old inserts that might still have valid, non-expired coupons in them. Here's what I do:

I've mentioned the Coupon Mom coupon database in the past. You'll have to sign up if you haven't yet (it's free). Once you're signed in, click on "grocery coupon database." Then you'll select your region/state.

When the coupon database opens, don't search for anything in the search box. Simply scroll down and you will see every available non-expired coupon listed in date order from newest to oldest.

Scroll down to the very bottom of the list, where the oldest possible coupons are.

If you look right now, you'll notice that the oldest insert listed is 6-7-09 RP. So right away, you know that you can toss everything prior to that. And then you can look at the one single coupon that is in the 6-7-09 RP, and decide if that insert is worth keeping.

Just go up the list and keep doing that until you've purged your old coupon inserts, and you're left with inserts that have valid coupons that aren't expired yet! If an insert has only a couple coupons you want, you might consider just clipping those few and tossing the remainder of the insert.

I pretty much purged everything up through September yesterday. There were a couple coupons in the June, July, and August inserts, but I didn't have an interest in them.

Pretty simple, eh? I love this method! It makes for a really quick and easy way to clean up my coupon organizing filing box.
