ohhh yes! I just made some lasagna roll ups to have as lunch this week (from All You magazine!!) It's GREAT, and cheap, and vegetarian!!

1) Bring a large pot of salted water to boil and a 8 lasagna noodles and cook until al dente, about 8 minutes. Drain well. While pasta cooks& 1 1/2 cups ricotta. Season with salt an pepper.

2) Preheat oven to 350 and mist a 9 inch square baking dish with cooking spray.

3) On a clean work surface, lay out a noodle, spread some spinach-ricotte mixture on top, and roll up noodle. Cover botton of pan with 1/2 cup marinara sauce. Place rolled-up noodle in dish, seam side down. Repeat with remaining noodles and ricotta mix.

4) Spread another 1 cup of marinara over noodles and sprinkle with 1/2 cup shredded mozzarella. Bake 25 minutes or until sauce is bubbling and cheese is melted.
