Menu Plan Monday!



Why is Menu Planning so important, and how does it affect a grocery budget? If you've been asking yourself what the big deal is about menu planning when I share my menu with you each week, be sure to go visit A Few Short Cuts to check out the guest post I did on menu planning a couple of weeks ago. I think it will help shed some light on this subject for you...

Sorry for getting this Menu Plan Monday up so late tonight! This week's menu consists of some meals from last week that we never ended up using, as well as a few new recipes that I'm anxious to try! My mother-in-law gave us a huge bag of organic Quinoa, so you'll be seeing that on the menu every week for the next couple of months. (There are millions of ways to make a meal out of it, and it's so delicious!)

Here's what I have on the menu for this week:

Monday - Leftover Cabbage Calzones from Sunday night

Tuesday - Dinner With Family (we do this every week)

Wednesday - Confetti Rice Salad

Thursday - Pineapple Fried Quinoa

Friday - "Grown Up Mac N Cheese" (spinach pasta bake) from Vegetarian Times magazine. This is a leftover recipe from last week's menu.

Saturday - Mixed Vegetable Kootu with Naan Bread

Sunday - Vegetarian Omelets (Mexican style with cheese, onion, rice, refried beans, and salsa), Poblano Cucumber Salsa, Tortilla Chips

We do cook Vegetarian (although we eat seafood). To read more about how this affects our budget, check this post out.

Feel free to e-mail me about that as well, if you have any questions about how I change each recipe to make it a little better (in my opinion)! =)

I was on a veggie/seafood diet for almost two years! It was so hard because I was also doing a low carb diet to lose weight. So basically, I could eat nothing;-)

Ah man! I can't imagine! I always tell people that there is no way I could do the low-carb thing, because you mainly have to eat meat!

Well, I lost about 40 lbs. that year because basically I couldn't just grab something quick (like fast food because it had meat or tons of carbs) ,and I couldn't just fix up a lot of the ready made items (same reasons). I really had to plan my meals, and that limited my snacking. I also worked out a lot.

I read your blog all the time! Thanks for posting all your deals.

looks like a great week! We are introducing meatless nights consistently in our house, but I do have to balance that out with hubby the meat eater. Seafood goes over well, but hubby will not eat fish...that's something that I've pretty much given up on. Now I just focus on opportunities to serve it to my children out of the house when hubby won't be seen not eating it LOLOL.

I made the Grown Up Mac N Cheese last night for dinner and thought it was pretty good :)

I tried the low carb diet in high school, I ended up with migraines and I couldn't focus. It works for some though. :) I'm a vegetarian now, so I think I would starve :p I like my carbs.

Meatless means fish-free too. Have you searched Recipezaar for vegetarian meals? I've found some of the best recipes on there, lots are omni friendly too. Pizza, casseroles, lentil loaf, soups, stews, chili, enchiladas, stir fry, ravioli, etc. Healthy too :)

Yeah, we rarely eat seafood if ever. But we're just not as against it as we are meat (we do it mostly for world hunger reasons, and wild-caught fish does not contribute like meat does).

I LOVE recipezaar! I use it ALL the time!

Have your heard of 101 Cookbooks? It's an AMAZING blog. YUMMY recipes, too!!

My friend Jenni is the coupon queen of the Vegetarian forum I post on, I know she has your link now (posted it on a thread). :) I've never been good at the whole coupon thing, but I'm trying to learn now. She has inspired me, she gets excellent deals and I'm jealous :p

That's great! I'm in it for animal rights and health reasons, any reason is a good reason :) It really does make an impact on everything (animals, health, world hunger, global warming, pollution).

Recipezaar is like a drug to me :p I would say that about 80% of my recipes come from there. The others come from Veganomicon, AllRecipes, magazines (VT or Women's Health) and random blogs (often of friends).

I've heard of it (101), but I've only seen it in passing. Thanks for the suggestion, I'll check it out right now.
