Menu Plan Monday: Eat From The Pantry Challenge

After almost a month break from Menu Plan Monday, I am definitely glad to be back! I have to warn you though - I'm in the middle of the Eat From The Pantry Challenge, so my menu isn't too thrilling this week!

Here's what I have planned for this week:

Monday - Bagged Frozen Meal (shameful, I know!)...it was actually pretty yummy, though. =)

Tuesday -
Snow crab legs, Rice, Steamed veggies

Wednesday -
Spaghetti

Thursday -
Possible Dinner With Family (we usually do this every week)

Friday -
Egg Salad Sandwiches and Homemade Fruit Smoothies

Saturday -
Rice, Broccoli, Cheese, and Walnut Surprise

Sunday -
Southwestern Lime Couscous Salad (one of my faves!)

We do cook Vegetarian (although we eat seafood). To read more about how this affects our budget, check this post out.

How do you make your smoothies? We have done homemade smoothies at home before and they never turn out quite right :).

Angela, I always add vanilla yogurt (~1/2 cup per smoothie). That and a sweetener (to taste) like honey/powdered sugar/Splenda make a world of difference in the consistency and taste! *TIP: Add the honey before the ice for best consistency!* Hope that helps! -Jessica

Honestly, I've done tons of experimenting, and I can't ever get the consistency just right...

And then I discovered the secret! FREEZE YOUR FRUIT. Using ice just never worked for me. I could never get the right ratio.

I buy fruit when it's really low-priced, cut it up, and store it in serving-sized baggies in the freezer.

I usually put 2 or 3 types of frozen fruit, 1 single-serve container of a fruit yogurt (whatever I have on hand that sounds like it will go good with the fruit, and then I just add a some skim milk until I get the right consistency!

I know that I have the right consistency, when the smoothie will run by itself in my blender nice and smooth, without me having to mess with it with a utensil. =)

This usually makes 2 full sized smoothies for me and my hub.
