Menu Plan Monday!

This week is kind of a combination of a couple new recipes I'm trying for the first time, and some old recipes from the past few weeks that we never got to (for one reason or another). The following meals are planned around a $35 weekly grocery budget. We used to spend $50/week. After undertaking a $20 weekly grocery budget challenge for the month of October, however, I realized that we could definitely reduce the amount we spend on groceries. So our new grocery budget is $35/week! (You can go here for ways to save money on your groceries).

Anyways, here's what I have planned for this week:

Monday: Bow Tie Medley

Tuesday: Zucchini with Chick Pea and Mushroom Stuffing

Wednesday: Vegetable Masala over rice

Thursday: Dinner with family (we do this every week).

Friday: Moroccan-Style Stuffed Acorn Squash

Saturday: Spaghetti with vegetarian crockpot sauce (minus the beef substitute crumbles)

Sunday: Mexican Casserole (minus the chicken)

Yes, we cook Vegetarian...to answer some of the questions I have received recently about our menu-planning. I am planning on doing a Q & A post about how cooking vegetarian changed my grocery budget. Stay tuned for that within the next couple of days! You might be surprised what you hear...

So impressed that you cook every night! Too many night we put a skillet dinner on...just so tired after work!

We LOVE the Love Dare--you should definitely try it. But, like the movie says, you have to go at it with your whole heart, definitely very challenging.
